Mini Cheesecakes

Ingredients
- 80 g butter
- 180 g sugar
- 1/2 Vanilla bean
- 2 eggs
- 20 g lemon juice
- 200 g cream cheese
- 250 g quark
- 45 g corn flour
- 1 1/2 tsp baking powder
- jam for topping
Instructions
- preheat oven to 180°C. Grease a muffin tin very well.
- sugar and vanilla bean to the bowl, mill 30 Sec./speed 10 and scrape down the sides with spatula
- add butter, eggs and lemon juice mix 1 min./speed 4
- cream cheese, quark, corn flour and baking powder into bowl, mix 20 Sec./speed 5.fill dough in prepared muffin tin.17-20 minutes (180°C) - turn oven off and let the mini cheesecakes rest in the oven for another 10min.remove from the oven and let them cool down.remove mini cheesecakes from tin and top with a little bit of jam to serve.
