Ingredients
  

  • 80 g butter
  • 180 g sugar
  • 1/2 Vanilla bean
  • 2 eggs
  • 20 g lemon juice
  • 200 g cream cheese
  • 250 g quark
  • 45 g corn flour
  • 1 1/2 tsp baking powder
  • jam for topping

Instructions
 

  • preheat oven to 180°C. Grease a muffin tin very well.
  • sugar and vanilla bean to the bowl, mill 30 Sec./speed 10 and scrape down the sides with spatula
  • add butter, eggs and lemon juice mix 1 min./speed 4 
  • cream cheese, quark, corn flour and baking powder into bowl, mix 20 Sec./speed 5.
    fill dough in prepared muffin tin.
    17-20 minutes (180°C) – turn oven off and let the mini cheesecakes rest in the oven for another 10min.
    remove from the oven and let them cool down.
    remove mini cheesecakes from tin and top with a little bit of jam to serve.
