
Cinnamon Scrolls
Equipment
- Thermomix or use standard baking equipment
Ingredients
- 170 g sugar
- 250 g milk and a little bit extra for the glaze
- 10 g dried yeast
- 500 g flour
- 150 g butter soft, in pieces
- 1 egg
- vanilla essence
- 1-2 tsp cardamom powder
- 8 tbsp brown sugar
- 3-4 tbsp cinnamon powder
- 2 tbsp lemon juice
Instructions
- add the sugar in the mixing bowl mill 30 Sec./speed 10, pour into spare bowl and set aside
- milk, 70g of the milled sugar, yeast into the mixing bowl and set to 5 min./37°C/speed 2
- add flour, 70g butter, egg, vanilla and cardamom. set to 10 min / kneeding settingduring this time grease a prepared bowl, transfer the dough into the bowl, cover and let it sit in a warm place for 30-45 min.clean the mixing bowl, so it is ready to go after the resting time
- 80 g butter into the mixing bowl and set to 5 min./60°C/speed 2 to melt the butter.during this time place some baking paper in a baking dish (30 x 25 x 6 cm)
- roll the dough on a floured surface to a rectangle (ca. 25 x 50 cm) and spread ca. half of the melted butter on the dough. Then spread the brown sugar and then the cinnamon, until no white dough is shining through.roll the dough from the long side and cut into 2.5 cm slices.set the slices next to each other into the baking tray.cover again and let it sit for another 20 min.preheat the oven to 170°C
- before sliding the baking tray into the oven spread the remaining melted butter over the scrolls.bake for ca. 30 Minuten (170°C) until they have a nice golden colour.take the tray out of the oven and let cool (ca. 30 Minuten).
- add lemon juice and 100g of the milled sugar to the mixing bowl and set to 10 sec / speed 4 to mix
- add 1 tbsp of milk and mix again 5 Sec./speed 4.pour the mixture over the cooled cinnamon scrolls.let dry and serve.
